Tonight is my take on stuffed peppers: Ground pork is the meat, and I have used a porchetta seasoning mix rather than a plain Italian seasoning to in order to punch up the porkiness. I’ve also added a touch of chipotle pepper, just to ratchet up the spiciness a touch (the porchetta seasoning has some red pepper flakes in it already). I’ve topped the peppers with local spreadable cheese from a farm less than two miles from us. The red peppers have a tomato-herb cheese and the yellows have a garlic-herb cheese. Both also have a light grate of Cabot cheddar on top that has browned nicely under the broiler.
Going into the oven...
oh yeah. just a couple minutes under the broiler to brown that cheese!
They’re pretty damn tasty, if I must say so myself... but I don’t have to, because my mother-in-law said they were fantastic ;)

It would have been sausage peppers and onions except my housemate ate all the sub rolls so now it’s frozen pizza

Looks good! We had crawfish et ouffee. My wife can’t have the shellfish any more, so I had to make it. I’m the kind of guy that really needs a recipe. Without one, cooking really stresses me out. As you can guess, I’m really stressed out, even though it turned out ok.

mmmm, I love me some shellfish, especially etouffee... My mother is violently allergic to lobster and crawfish, but she can eat shrimp... so she does. Those little buggers are delicious.

My wife’s allergy is a new thing. The doc told her that it’s just a matter of time before she has a bad reaction. She may eat it a hundred more times without a problem or one more time. Either way, she decided it wasn’t worth the risk.

I just had a chicken madras, steamed rice and o nion bhajis and samosas.
I was going to make a lasagne this week, but decided against and that’s only strengthened my resolve to make one next week.

Probably leftovers of my makeshift version of stuffed peppers: Pasilla peppers, mushrooms, onions, and cheese. Copious amounts of alcohol, beef sticks, and cookies will also be consumed

tomorrow I’m probably going to eat the left over peppers for lunch and then make a mutton curry for dinner. We’ve made onion bhaji before, but we can’t make them quite the way the take out places do.
